THE PIGS OF THE ALPS

Mountain farming is important in Valais (CH). Pigs that are kept for farming purposes there are living most of the year in the open air, in the Swiss Alps pastures.
Instead of throwing away the whey of the cows' milk, it is given to the pigs as their predominant food - a very rich and luxurious food for them!
As a result, a particularly aromatic and tender meat is obtained.

A SMALL ARTISAN MOUNTAIN BUTCHER

In the mountain village of Orsières (Valais, CH), a small communal slaughterhouse is still in operation.
It allows breeders in the region to deliver cattle to local mountain butchers, for their own production.
BTB is one of these village and mountain butchers' shop.
BTB stands for Boucherie-Traiteur-Boissons (Butcher-Caterer-Beverages). It is a small butchers' shop that produces multiple products according to old recipes.
Their dried pork is awesome (our favorite!), and it's just perfect with raclette. That's why we bring it too to Sweden!

A SMALL, PASSIONATE TEAM

Simon is a local man, attached to his village and region, and to Valais and its traditions - first of which food.
Simon is full of ideas, and he carries out many of them.
He is the director of the milk house in Orsières. He also started BTB some years ago.
He and his team run a butchers' shop in Orsières itself, and also in Verbier. And they offer a catering service with their products and specialities.
This team's batteries are fueled with passion and ideas and... high-end meat's proteins!
