FRESH LOCAL MILK BROUGHT IN DAILY

22 mountain farmers (from the Grand Saint-Bernard, in the heart of the Swiss Alps in Valais) bring their milk to the milk house in Orsières - and they do so every single morning, right after they milked their cows.
This is fresh, rich and first class milk from the mountains.
And this is the very ingredient of raclette cheese ("raclette ost").

SAVOIR-FAIRE

The milk house in Orsières (Valais, CH) has been inaugurated in September 2020. Its Swiss equipment is state of the art, ensuring the highest standards of quality and hygiene.
Equipment is important, but what makes the difference between a good and an outstanding raclette cheese ("raclette ost") is the savoir-faire of the craftsmen.
Indeed, milk is a product from the nature and you have to see and touch the product all along its production process to ensure perfect timing at each step.
Orsières produces raclette and several other traditional dairy products. Should you pass in Valais, pop by: the milk-house can be visited and there is even a little museum.

VERY MUCH AS IN THE OLD DAYS...

The machinery was of course far less sophisticated and complete, and there was far more manual operation along the production way, but overall, nothing has changed over time: raclette cheese ("raclette ost") has always been produced in the same way and spirit.

ALL ABOUT CRAFT AND CRAFTMEN

The people working at the milk house in Orsières are local, passionate people.
They are genuine craftmen (and women!) that have learnt the techniques and production secrets by year-long practicing, and learning from and observing older generations of raclette craftsmen.

RACLETTE, AT ITS BEST

The end product flirts with perfection.
The finest milk from the mountains, transformed into this golden wheel of high-end, traditional raclette cheese ("raclette ost").
Each wheel proudly wears the name of its origin (Orsières), moulded into its circumference. That's part of the tradition and it tells the "pedigree" of the cheese.
Before being eaten, the cheese wheels ripen for 3 full months, turned and checked, in very strict air conditions (temperature, humidity).
What a beauty! (And it's so good!)
