Is raclette suitable for vegetarians?

Raclette cheese (“raclette ost”) is being made with unpasteurized milk. The milk is then poured into a big vat where it is warmed to a specific temperature while being mixed with some cultures and rennet to achieve the right acidity and for coagulation.

With a vegetarian diet, certain animal products are not consumed. Depending on which products are avoided, different forms of vegetarianism can be distinguished.

Traditionally, rennet extracted from the stomachs of calves has been used to make cheese. Although milk -the basic ingredient in cheese- is an important component of the ovo-lacto-vegetarian diet, some vegetarians exclude cheeses produced with traditional rennet.

In addition to the traditional rennet extracted from the stomachs of calves, microbial rennet is used more and more today. As rennet is considered by food law as a processing aid and not as a food additive, it is not mandatory to declare it.

I am lactose intolerant; can I eat the raclette cheese sold on cheesecorner.se?

A large proportion of the lactose is separated with the whey during cheese production. The remaining lactose is almost entirely broken down by lactic acid bacteria during the maturation process.

Hard and extra-hard cheeses qualify as lactose-free.

Semi-hard cheeses -among which raclette cheese (“raclette ost”)- and soft cheeses contain traces of lactose. But with the lactose content often less than 0.1g per 100g, these cheeses are tolerated by most people and are permitted to be labelled as lactose-free by law.

Is the raclette cheese ("raclette ost") sold on cheesecorner.se gluten-free?

Gluten or “glue protein” is found in various types of grain.

AOP raclette cheese is made exclusively of fresh milk, lactic acid bacteria, rennet and salt. There is no grain/cereals used to flavor that traditional, quality cheese.

Thus, yes!, our raclette cheese is gluten-free.

The raclette cheese is made with unpasteurised milk; is it safe?

There is nothing harmful about raw milk cheese. Cheese making is designed to take a product that spoils quickly (milk) and make it suitable for storing for a long time.

The raclette cheese (“raclette ost”) sold on cheesecorner.se is AOP (Appellation d’Origine Contrôlée, i.e. Protected Designation of Origin): it is a label that regulated by the Swiss Confederation, and it is very strictly regulated – also in terms of ingredients quality, production standards and hygiene and product quality testing. Raclette cheese has been aged at 2°C or above for at least 60 days. Studies have shown that if this procedure is followed, the added salt and acids produced by the added bacterial cultures prevent harmful listeria, salmonella and E. coli bacteria from growing. The risk that remains is extremely small.

Can I eat the rind of a raclette cheese?

Yes, you can.

It is perfectly safe to eat the rind of our raclette cheese (“raclette ost”).

And, our tip: you shouldn’t miss out on this exquisite part of the raclette cheese. It is actually part of the delicious taste experience.

For a “Valaisan” it would be sacrilegious to not eat it. They even call the melted crust, “la religieuse” (the religious sister).

The reason of this nickname is not known for sure. But for sure, we can say that this slightly less soft part is… divinely good.

But that’s of course clearly a question of taste. Taste it with the rind, and if you don’t like it, melt your next slices of cheese without.

I'm pregnant, should I avoid eating raclette cheese?

Most cheeses are okay during pregnancy and even encouraged as they contain a lot of the vital nutrients that support your baby’s growth and development, including protein, calcium, phosphorus and vitamin D.

Certain cheeses are off-limits though when you’re pregnant. This is because they can contain listeria, a bacteria which can cause a type of food poisoning called listeriosis.  Unfortunately, the hormonal changes that occur during pregnancy can compromise your immune system, leaving you more susceptible to developing listeriosis.

Raclette cheese (“raclette ost”) is a washed-rind cheese and is part of the group that is not recommended during pregnancy unless it is thoroughly cooked until steaming hot.

Once the baby is there, you can go back to eating raclette. And you’ll even have a double portion!

I’d like to organize my first raclette party. What do I need?

Your first raclette party? Great! It will be a success, for sure.

Is raclette suited for children also? or should I prepare something else for them?

Children will love it!

If they like creamy, melted cheese, they’ll love raclette.

They will like the taste of it, and also preparing their own melted cheese, wait for it to bubble in the raclette grill and pour it on their potatoes.

They decide what they want to add to it and try different combinations (a bit of dried meat, but no pickles… or nothing but the cheese… or a little cherry tomato… or…).

So, definitely: kids love raclette!

I'm having a raclette evening with 5 people (me included). How much cheese should I plan for?

We recommend 200-220g of raclette cheese (“raclette ost”) per person – that is for “normal eaters”. Some might eat less, some more, but it’s a good average to work on.

So for 5 persons, that means about 1-1,1kg of cheese – meaning a quarter of a raclette cheese wheel (weighting approx. 1,2kg which leaves a bit of a “security buffer” – which can be useful as this raclette is very good 😉).

Guests tend to eat quite some potatoes also, so plan some more here (250-300g per person).

Just in case, HERE the checklist we’ve set up to make sure you have all that is needed for your raclette party.

Should you want to be on the very safe side and make sure your guests are leaving the table with a full and happy stomach, you can also plan a little desert. HERE some ideas to round off your meal on a sweet and raclette-like note.

I have a raclette party in 10 days’ time. When shall I latest place my order on cheesecorner.se to be sure to get everything on time?

Even if your raclette party takes place only in 10 days time, our recommendation: order right away.

We dispatch the parcels latest 2 working days after the order date.

Distribution of the parcels is not under our control, so take a little bit of time buffer.

Once it arrives at your place, the raclette cheese will hold well in the fridge. No problem. It is a semi-hard cheese.

What is the best temperature to serve the raclette cheese at?

Raclette cheese (“raclette ost”) is to be kept in the fridge, at 2-6°C.

Our recommendation is to take the cheese out of the fridge about 2 hours before your guests arrive.

Leave the raclette cheese in its vacuumed package until you slice it.

Slice the cheese a bit before the arrival of your guests, and arrange the pieces on a nice plate.

Do not leave the plate with the sliced raclette cheese in the sun or in too warm a place.

Also cover it with some foil when it’s sliced and on the plate.

What do you typically drink with raclette?

The Swiss would mostly drink a good white wine along with a raclette meal.

They don’t have Swiss white wines at System Bolaget, but they are really of good advice if you ask them for a good match with raclette.

Some people also enjoy beer with raclette. Again, System Bolaget can orient you.

Otherwise, and this might be a surprise to you: in Switzerland it is not uncommon that people also drink some hot tea or herbal tea. Indeed, it tastes great with raclette and -just like alcohol- it is said to help digestion.

Does your home smell of raclette after a raclette party?

Ah. That’s a fair question.

Warm, melting cheese is part of the pleasure. It pleases the nose as the raclette cheese taste enjoys the palate.

Though once the party is over, there might be a smell of “cold cheese” lingering.

No problem!

Baking soda (bicarbonate) is the solution – as so often!

Either you have some small bowls in the room over some hours, or you boil it in some water.

Do you have gift cards, and if so, how do they work?

We have 2 types of gift cards at CHEESE CORNER:

  • A paper version that is sent to you by post mail; and
  • A digital version that is sent via eMail (to the recipient directly or to any other eMail address that you indicate).

The paper version takes a few days to arrive per mail, whilst the digital version can be sent directly after your payment is made. You can also decide on any future date for the digital version to be sent out.

The paper version is printed on a nice square thick paper and put in a vintage kraft envelope. For the digital gift card, you can pick the design that you prefer.

Value-wise, there are multiple option you can choose from for both the paper and digital gift cards, ranging from 250 to 5’000 SEK.

  • Are to be used on cheesecorner.se, on the available assortment. (You can use the value in 1 or several purchases.)
  • Are valid 1 year after the purchase date.
  • Are non-refundable and cannot be redeemed for cash.

This code is to be used on cheesecorner.se, when proceeding to check-out.

There you simply enter your code.

Should your purchase value be above the gift card’s value: no problem. You simply pay the difference at check-out.

You can use the value of your gift card all on one purchase, as you split its value on several.

Your gift card is valid 1 year from the purchase date. The date is written on your gift card.

What are the “best before dates” on raclette cheese ("raclette ost")? And on dried meat?

The best before date is indicated on each product.

It is a “best before” date and it’s cheese (the older, the better…). This means that if you’ve stored the raclette cheese and/or the meat in the fridge at 2-6°C, you can certainly consume it beyond the “best before” date if the product looks good. Check it with your eyes and nose, just like you would do with similar products.

Unopened, how should raclette cheese be stored?

Raclette cheese (“raclette ost”) is made of unpasteurized milk. It needs to be kept between 2 and 6°C.

So, when arriving at your home, put the cheese right away into your fridge. Leave it as delivered to you, i.e. vacuum-packaged.

Do NOT put the raclette cheese into the freezer.

Once opened, how should I keep the raclette cheese and dried meat leftovers? in what should I wrap them? how long will they keep?

Should there be some leftovers, cover them with a plastic film – or, even better, put in back in a vacuum-package (if you have such a machine).

In either case (filmed or vacuum-packaged), put the cheese right back into the fridge.

Same applies for the dried meat.

Should their be some cheese or meat smells in your fridge, put a little container filled with baking soda into a corner of the fridge. The smells will be rapidly absorbed.

Do NOT put the raclette cheese or the dried meat into the freezer.

Can I freeze the cheese and the dried meat?

No, do NOT put the raclette cheese (“raclette ost”) and the dried meat that you’ve purchased at cheesecorner.se into the freezer.

No, you’re not obliged to create an account to place an order on cheesecorner.se

If you proceed to checkout without having created an account or without having logged-in on your personal account before, you’ll head straight to check-out.

You’ll only fill in the shipping and payment information – and that’s it.

There is no account being created. No password being set.

I placed an order online today; when will I receive it?

For the delivery, CHEESE CORNER has partnered with BRING.

As a rule of thumb (knowing that exceptions happen), you can expect your parcels within 3-4 days after you placed your order. Indeed:

  • We at cheesecorner.se prepare your order/parcel as rapidly as possible, generally within 1-2 working days.
  • BRING then generally delivers within another 1-2 working days.

You can track you parcel as soon as we hand over your parcel to BRING.

How will my raclette cheese and dried meat be sent out? Will they stay fresh during delivery?

The articles from cheesecorner.se (food and non-food) are shipped via mail, as a parcel.

The cheese and dried meat are thermo-wrapped, with a cold gel bag inside.

This keeps the items safe for the transport.

Though -and this is very important- if you’ve purchased raclette cheese and/or dried meat, you need to pick-up your goods the day you get the delivery notice.

Which delivery company do you use?

For delivery, CHEESE CORNER has partnered with BRING.

Can I come and pick up my order at a store?

CHEESE CORNER has just started its adventure and its main and permanent marketplace is on this website/webshop.

We do not have a permanent boutique yet.

As soon as we have, you’ll be informed and then be of course able to pick-up your goods there.

We will also test some “click and collect” options in the near future. We’ll let you know when are where this will happen.

But for now, no: you can “only” retrieve our articles by ordering via this website.

How much does delivery cost? What does it cover?

Delivery is a flat fee of SEK 75 (excl. VAT).

This fee covers:

  • The delivery to the ombud of your choice, and also -of course-
  • The preparation and packing material to keep all items -incl. the high-end food items- in perfect shape till destination.
Can I add a gift message to my order?

On the checkout page, you can leave us a message under “Order notes”, indicating what you’d like us to drop as a message.

No problem. We’ll be happy to add a little card.

Where can cheese be delivered? Everywhere in Sweden?

BRING delivers almost everywhere in Sweden, yes.

There are only very few postal codes that are not covered by BRING.

Should this be the case for your postal code, contact us (welcome@cheesecorner.se) and we’ll make our possible to find a solution.

Do you deliver to countries other than Sweden?

For now, we deliver only to Sweden.

My order hasn’t turned up, where is it?

Should your parcel not turn up according to the BRING tracking information, please contact us immediately (welcome@cheesecorner.se).

Covid-19

Is it safe to eat raclette with friends in times of Covid?

A raclette meal is comparable to many other meals where you gather family and friends around a table: every one has his/her tableware, incl. his/her own little pan to heat the cheese.

So safety is about guests to not join a meal when having symptons (which is a natural thing to do for any illness, isn’t it?) and safety is about proper distancing.

You can also -instead of using your fingers- make sure to use clean forks and spoons to take your food on the plates. Or to serve everyone with his/her “set of raclette”.
